Claudia's Cranberry Chutney

 

2 Bags 12oz fresh cranberries

1 red onion chopped fine

1 apple chopped small – do not peel

Zest 1 orange then peel and chop the orange ½” sections

Zest 2 lemons and then juice the lemons and add juice

1 cup Dried Apricots chop small

1 cup white raisins or dried cranberries if your out of raisins

I’ve also added chopped dates or figs

1 cup chopped walnuts or pecans

1 cup apple cider vinegar

½ tsp cloves

1 tsp allspice

1 tsp cinnamon

2 tsp ginger (use 1 and add more to your taste) you can also us crystalize ginger

Just simmer all ingredients  until thick, cool and share with friends.
